Pruning: Guyot. Yield per hectare: 150 quintals / ha
The vinification
Grape variety: 100% Pinot Grigio. Harvest: early September depending on the year, selected grapes harvested by hand Vinification: After pressing the wine, made from a cold maceration, is fermented in stainless steel to preserve and enhance the varietal aromas. Aging: about 3-5 months in stainless steel, and at least 2-3 months in bottle.
The wine
Analytical data: Alcohol: 1. 2,5% Residual sugar: 4 g / l Total acidity: 5,6 g / I Bottling: between the end of year (harvest) and the beginning of the new year.
Characteristics
Colour: Straw yellow with greenish reflections. Olfactory: Fruity, elegant, with sweet aromas of flowers. Taste: Fresh and maintains a good mineral structure.
Gastronomic combinations
Pairs well with risotto, pasta and soups. Serve at 10-12
